Delicious Spinach Crepes with Berries Recipe
Say goodbye to boring green eggs and ham, and say hello to these delightful Spinach Crepes with Berries! 💚
Ingredients:
4 cups Baby Spinach
1 cup Unsweetened Almond Milk
2 Eggs
1 cup All Purpose Gluten-Free Flour
1 tbsp Coconut Oil
1/2 cup Strawberries
1/2 cup Raspberries
1/2 cup Blackberries
1/4 cup Maple Syrup
Instructions:
In a blender, combine baby spinach, almond milk, and eggs. Blend until smooth.
Gradually add gluten-free flour to the blender, blending on low speed until the batter is well combined.
Heat coconut oil in a large skillet over medium heat. Once hot, pour a portion of the batter into the skillet and swirl gently to spread it into a thin layer.
Cook for about 1-2 minutes, or until small bubbles form on the surface. Flip the crepe and cook the other side for about 30 seconds. Repeat with the remaining batter.
Divide the cooked crepes onto plates, fold them around a generous serving of strawberries, raspberries and blackberries, and drizzle with maple syrup.
